RECIPE
5-6 cups grated carrots on the fine side of graterIn a pot boil 1 Lt Full Cream Milk Now In a Steam pot I added the Grated Carrots and I added little of the boiled milk let it steam for 5min Then I opened the Steam pot to check I added the rest of the Milk I closed the pot and let it steam I did this twice I Then transfered it to a normal pot and cooked the carrots mix on slow heat till the moisture was dry Then I added gradually +-1 Cup KLIM to the above add little by little to avoid lumps Stirred the pot Now In a SEPERATE FLAT POTHeat 1 Cup ghee (Clarified butter) once heated and melted Add ½ Cup Semolina (soji (semolina))Braise till Semolina (soji (semolina))Is light brownAt this stage if you prefer add Almonds Cashews pista (pistachio nuts) 1 added 1small piece Cinnamon Stick (removed it after the Halwo was done)Braise till the Carrot and ghee (Clarified butter) mix wellNow add 125g ButterSaffron Strands OR Saffron Essence 1Tblsp crushed Elachi (cardomom)(Rose Essence is optional )+- 1 & ¼ Cup sugar Mix and keep stirring do not leave to avoid scorching Add in 1 large Can Nestle Dessert cream1 large can Condensed milk3 tablespoon Dessicated Coconut Cook on stove till thick +- 1 hour I then transferred the Halwo Into an oven proof casserole At 180* to dry out a bit and for the ghee (Clarified butter) to surface once done Garnish with more Almonds Cashews and pista (pistachio nuts) Enjoy 😋
