INGREDIENTS
Ingredients: For the Sauce: 2 tablespoon butter2 tablespoon flour1 teaspoon crushed fresh garlic½ teaspoon Italian herbs1 stem fresh thyme250ml fresh cream215g tin cream-style sweetcorn1 teaspoon green chilli (adjust to taste)1 tablespoon mayonnaiseSalt and pepper to taste2 tablespoon chopped fresh coriander Optional: ¼ cup milk (if sauce is too thick)
METHOD
Method: ■ Make the rouxIn a saucepan over medium heat, melt the butter. Add flour, garlic, Italian herbs, and thyme. Stir continuously to form a smooth roux.
■ Add the liquidsSlowly whisk in the fresh cream, then add the cream-style sweetcorn, green chilli, mayonnaise, salt, and pepper. Stir continuously.
■ Finish the sauceOnce the sauce begins to thicken, add chopped coriander. If the sauce is too thick, add a splash of milk to loosen it.
■ AssembleIn an ovenproof casserole dish, arrange mini bread rolls. Pour the hot, thickened sauce over the rolls and top generously with grated cheese.
■ BakePlace in a preheated oven at 180°C and bake until the cheese is melted and bubbling.
