500g pumpkin pack - cut into small cubes if you like, I left them as isSaltFreshly ground Pepper (rainbow)Course red chilliesOlive oilGreek oregano herbsGarlic cloves (whole)Purple onion sliced into wedges

METHOD
Add pumpkin, onion, garlic and seasoning to a roasting pan. Toss with olive oil Bake at 200 until pumpkin is softAdd honey half way through baking processAdd chickpeas and crumbled feta, return to the oven to heat through before servingGarnish with coriander

Original recipe calls for butternut but I used pumpkin instead
