INGREDIENTS
200g butter50g oil½ cup sugar
2 eggs
½ cup maizena (corn flour)3 cups flour3 teaspoons baking powder
Filling of choice - simple ganache, jam, white chocolate ganache, buttercream, melted chocolate etc.
METHOD
Cream butter, oil and sugar. Add eggs and beat well. Add sifted dry ingredients and bind dough.Roll out on floured surface and cut shapes.Bake in well preheated oven on 180°c for 6-9 minutes or until golden and crisp. Cool completely on wire rack.Match similar sized biscuits and fill generously with filling. Store in a well-sealed, airtight Tupperware. Allow to rest for a few hours before serving.
