INGREDIENTS
For the potato mixture: 1 teaspoon mustard seeds 2 tablespoon oil for tempering 2 large potatoes boiled and mashed roughly 1 teaspoon green chilli paste Salt to taste 1 teaspoon sesame seeds ½ teaspoon crushed cumin seeds ½ teaspoon tumeric 1 tablespoon fresh lemon juice Coriander & mint chutney Handful freshly chopped coriander
Sliced onions Chopped green peppers Sliced Cucumbers CheeseButter
METHOD
Heat oil in a pot / wok add the mustard seeds let it crackle then add in the potatoes with the rest of the spices with lemon juice mix and cook till heated through. Remove from heat and use for the sandwiches. Butter both sides of the bread slices add coriander chutney generously add the potatoes mixture followed by Cucumbers, onions, green peppers and cheese drizzle more of the coriander chutney close with another slice of bread. Toast till slightly golden brown serve hot.
INFO & TIPS
This is a good way to use up any left over mashed potatoes or your regular wara (potato fritters) mixture.
