INGREDIENTS
3 large eggs 2 cups milk of choice1 cup flour of choice (such asbuckwheat, whole wheat, or all-purpose gluten free)Generous pinch of saltButter or oil of choice for cookingGreens or herbs of choice (e.gspinach or basil)
METHOD
1. Add eggs, milk, flour, salt and greens to blender. 2. Blend until smooth. 3. Heat pan over medium heat. Add a small pat of butter and swirl around. 4. Add ⅓ cup batter to pan and quickly tilt until batter covers entire surface. Allow to cook for a few minutes until bubbles form. Loosen around the edges and flip, cooking for 1 more minute. 5. Add desired fillings, fold over and serve!

It’s a clever way to get in veggies , and you can get as creative as you like - stuff with cheese, cream cheese (or labneh), avo, any leftovers…
Makes for an ideal healthy after school snack or even a weekday lunch
