3 tablespoon oil1 cup rice½ onion diced½ cup peas1 teaspoon Garlic granules1 teaspoon crushed black pepper½ red capsicum diced½ teaspoon salt1 piece of Shredded fillet2 carrots julienned1 teaspoon chilly flakesHandful of cashews (fried separately)½ cup green beans julienned2 cups water or vegetable stock
1. Heat oil in a pan on medium heat. Once hot add chopped onions and cook for a minute. 2. Then add garlic granules and shredded chicken and mix. 3. Add in your carrots, capsicum, green beans and peas. Sauté for 3 minutes or till vegetable shrink slightly. Now add inchilli flakes. (this can also be used to sprinkle on topof the rice) .4. Now add 2 cups vegetable stock orwater. Further on, add salt and pepper and make sure to mix well.5. Get the water to boil on a high. Cover and simmer for 20 minutes or till soft. 6. After 20 minutes, stir the rice gently without breaking the rice grains. You can now take it off the stove and let itrest for 5 minutes before you serve. Finally you can garnish with your fried cashews and serve. (Coriander can be used too).
