INGREDIENTS
Ingredients 250g butter, softened¾ cup castor sugar1 teaspoon vanilla essence¼ cup oil¼ cup sliced almonds¼ cup chopped pecans ½ cup chopped pistachios½ cup cornflourAll-purpose flour (as needed to form a soft dough)Desiccated coconut (for coating)White chocolate (Milkybar or Cadbury Dream), melted.
METHOD
Method ■ In a large bowl, cream the butter and castor sugar until light and fluffy.■ Add in the oil, vanilla essence, and all the nuts (almonds, pecans, pistachios).■ Mix in the cornflour, then gradually add enough flour to form a soft, workable dough.■ Roll the dough into small balls (approx. 15g each) and place on a lined baking tray.■ Bake at 120°C for about 30 minutes, or until lightly golden at the base.■ Allow to cool completely.■ Dip each ball into melted white chocolate, then roll in desiccated coconut.■ Let set on parchment paper or a wire rack.
Note: These aren't exact Raffaello copies, but they're a beloved family favorite and absolutely worth making.
