INGREDIENTS
Chicken thighs or quarters (drumsticks)
For Arabic masala:Coriander seeds 1 tablespoonCardamom 1 tablespoonCinnamon stick 2-3 Cumin seeds 1 tablespoonCloves 10-12 Black cardamom 2Bay leaves 2-3Dry lemon 1 (I used the rind of a fresh lemon)Black Pepper corns 1 teaspoon Red chillies 2Turmeric powder ½ teaspoon
For marination :Coriander powder1 teaspoon Kashmiri chilli powder 1 teaspoon Turmeric powder ¼ teaspoontomato 1 green chilli 1 small piece of Ginger & 3 garlic cloves I lemon juice 2 tablespoon oil Pinch of orange red colour (It's Optional)Salt to taste
METHOD
In a pan add the whole dry spices and dry roast . Cool down the masala add turmeric powder and grind it well.
In a blender add 1 tomato 1 green chilli small piece of ginger & 3 garlic cloves make it into a paste. Take 1 tablespoon Arabic masala ,1 teaspoon Coriander powder, 1 teaspoon Kashmiri chilli powder, ¼ teaspoon Turmeric powder, Salt and the tomato paste we made add 2 tablespoon of oil mix well and marinate chicken on both sides. Marinate the chicken for at least 1 hour. Here it is grilled in an oven. For that preheat the oven at 180 degrees . Place the chicken on the grill tray. Grill for about 1 hour. After grill brush some oil or butter on the top of chicken.....
INFO & TIPS
I cooked mines in a hot pot,with oil and ghee
I served mines with rice,you could also serve this with rolls.
For some who prefer a milder taste,use 1 chilli or de-seed the chillies.
