Rice: Boil 2½ cups rice with salt and pinch of arad (Turmeric). Drain and steam.
Aloo fry:Braise ½ sliced onion in ghee (Clarified butter) with ½ teaspoon whole jeeru (cumin) and ½ teaspoon mustard seeds Add in 1 ½ cups cubed or sliced potato with salt chilli powder little arad (Turmeric) little dhana jeeroo 1 slit chilli. Add water and cook till soft.
Kari:Braise 1 med sliced onion in ghee (Clarified butter) with curry leaves 🍃 ½ teaspoon whole jeeru (cumin) ½ teaspoon mustard seeds ½ teaspoon Methi (Fenugreek) seeds slit chillies Liquidise:2 cups sour milk (I have used 500ml fresh cream)2 teaspoon @purespice_sa Kari masala1 clove garlic2 level tablespoon flour1 garlic clove½ onion3 chilliesLittle dhania (coriander)Salt arad (Turmeric) dhana Jeeru (Cumin) Add 2 pot. Simmer on low. Boil till thickGarnish with chopped dhania (coriander) and 2 tablespoon fried onions.
Mince:Braise 1 sliced onion in ghee (Clarified butter) with few cloves Taj peppercorns slit chillies whole jeeru (cumin) Add in ½ kg chicken mince 1 teaspoon @purespice_sa ginger 🫚 garlic 1 teaspoon @purespice_sa green chilli paste Salt chilli powder arad (Turmeric) dhana Jeeru (Cumin) Cook. Add in 2 Liquidised tomatoes 🍅 Chopped red and green peppers and 2 med potatoes cut into small cubes Add water simmer till done.Garnish with chopped dhania (coriander)
Serve with lekker mango atchaar
