INGREDIENTS
½ lb butter8 tablespoons sugarpinch of salt2 eggs1 ½ cups coconut2 teaspoons baking powder2 teaspoons ground cinnamon2 teaspoons ground mixed spiceFlour as required
smooth apricot jam for joining biscuitscastor sugar for coating biscuits
METHOD
Cream the butter and sugar till light and creamy. Add eggs one at a time and beat. Stir in coconut. Sift in baking powder, salt, spices and flour and mix into a dough. Take small pieces of dough and roll into a ball, lay on a baking sheet and press with the back of a fork to flatten slightly. Bake in a moderate oven for 15 - 20 minutes. While hot, join together with jam, and roll in castor sugar.
