Adapted recipe from an online source
INGREDIENTS
½ c oil100 g butter1 c milk
2 eggs1 c caster sugarVanilla essenceCaramel essence
2 c self raising flour
METHOD
Melt in a suitable saucepan on medium heat,the oil,milk and butter.
Allow to reach a gentle simmer,then remove from heat.
Beat together,the eggs,sugar and essence,then add in the cooled milk mixture.
Fold in the sifted flour
Pour into a greased tin and bake at 180 for 20-25 minutes until cooked.
Once cool,spread jam and coconut.
