Coconut Rice

Ingredients:1 cup white rice (bimrie)400g can coconut milk½ cup water¾ teaspoon rough salt(Optional- 1 piece cinnamon stick)
Garnish (optional)-Fresh fried onions3 whole green chillies (fried)
Method:Combine ingredients in deep pot over med-high heat. Cover with a lid and bring to boil.Turn down heat to low then leave to simmer for 15-20 minutes until all the liquid has been absorbed.Remove from heat and allow to rest for at least 5 minutes before serving.May garnish with onions and chillies.
