INGREDIENTS
½ kg chicken fillet strips - marinade chicken fillet strips with these ingredients:
1 tablespoon medium or hot Peri Peri Nandos sauce2 tablespoon lemon juice1 tablespoon peri peri oil½ teaspoon turmeric¼ teaspoon crushed garlic1 teaspoon coriander powder1 tablespoon chicken spice of choice (I used Adega spice)1 ½ tablespoon barbeque spice½ teaspoon chillie powder4 tablespoon mayyonaisesalt to taste
METHOD
Cook chicken in ghee (Clarified butter) and leave wettish when cooked ; in other words chicken should still be saucy…
Recipe for the riceBoil 1 ½ cups rice with: ½ teaspoon turmeric, ¼ teaspoon lemon pepper and 2 teaspoon salt. Strain the rice & dont rinse out too much.
Stir fry the following with ghee (Clarified butter) in a seperate pan : 1 onion, colored peppers julienned, sliced mushrooms & add 1 teaspoon spice for rice and ¼ teaspoon paprika. You may add more salt according to your taste. Mix chicken strips , the stir fry & rice well together. Grate some cheese & drizzle Nandos sauce of your choice (I used Bushveld braai (bbq)). Chop some fresh greens. Simmer on low to steam. Enjoy!
