A Treasury of Indian Delights Recipe Book
INGREDIENTS
1 cup boiling water1 cup chopped dates1 teaspoon Bicarbonate of Soda1 cup castor sugar125g butter (Β½ cup)1 egg1 teaspoon vanilla essence1Β½ cups flour1 teaspoon baking powderpinch of salt
Icing :
ΒΌ cup brown sugarΒΌ cup fresh cream50 ml (4 tablespoons) butter chopped pecans for sprinkling
METHOD
1. Combine dates and bicarbonate of soda together and pour boiling water over - leave to steep.
2. Cream butter and sugar together, then add in the egg and vanilla essence - beat well.
3. Sift dry ingredients and add to above mixture - mix well then add in the date mixture.
4. Pour mixture into a greased pan or into a mini muffin pan and bake at 180Β°C for 45 minutes. If you're baking in a mini muffin pan then reduce the baking time. Remove from oven and cool.
5. Prepare icing by boiling together the sugar, cream and butter for +-15 minutes, pour it over the cooled cake and sprinkle top with chopped pecans.
