125g baking margarine¾ cup castor sugar2 eggs¾ cup milk2 caps Robertson's peppermint essence¼ cap Robertson's apple green food coloring2 cups cake flour (sifted)2 teaspoon baking powder½ cup (or more) choc-chips
Ganache-1 slab dairymilk chocolate½ small tin Nestle dessert cream
Garnish-Mint Crisp chocolate (grated)Mint crisp blocks (halved)
1. Preheat oven to 180degC.2. Cream margarine and sugar together.3. Add in eggs and beat well.4. Stir in milk and essence. 5. Add in dry ingredients and beat for a smooth batter.6. Add in coloring, mix in. 7. Mix in choc-chips.8. Spoon batter into lined cupcake pans till ¾ full.9. Bake for +/-15min until skewered and comes out clean.10. Melt dairymilk, mix in cream.11. Spoon over cupcakes.12. Sprinkle on grated chocolate & place halved blocks in center of cupcakes.
