2-3 Bunches Methi (Fenugreek) bhaji (Spinach) Washed and cleaned, Boil in water for +-8 minutesOptionalDrain and keep aside (I do this cos I don't like bitterness.You can avoid this step)
3 Small Tomatoes Chopped2 Medium chopped onions
5 Beaten eggs with 2 tablespoon milk
Spices+-1 tablespoon crushed Red chilli flakes1 teaspoon tumeric1 teaspoon Salt or to taste1 teaspoon Dhana Jeera mix1 teaspoon Green crushed or chopped chilli paste1 teaspoon Ginger garlic paste
In Pan heat up some oil1 tablespoon ghee (Clarified butter) or butterAdd Onion sauteAdd chopped tomatoesAdd the rest of the spicesBraise well till tomatoes are soft and mushyAdd the Methi (Fenugreek) bhaji (Spinach)Cook few minutesNow Add in the beaten eggAdd little chopped dhania (coriander)Cook till well scrambledAlmost like MinceADJUST SALT AND CHILLI TASTESlightly moist not dryServe with RotisEnjoy😋
