INGREDIENTS
120g butter150g sugar 2 eggs 1 tablespoon. Vanilla 180g cake flour 2 teaspoon. Baking powder
Syrup: 180g sugar 350ml water 70g strawberry jam Food color (pink)
Coating 150g dessicated coconut 1 tablespoon. Water Food color (pink)
Filling 250g whipping cream 1 tablespoon. Icing suagr
METHOD
First, we'll cream together the butter and sugar. I'm using 120g of softened butter and 150g l of sugar. You want to beat these together until they're light and fluffy – this is key to getting a tender snowball.
Next, we'll add the eggs one at a time, beating well after each addition. This helps incorporate the eggs properly and creates a nice, airy batter.
Now, let's add in the rest of our dry ingredients vanilla, baking powder and cake flour. Gently mix everything together until just combined – don't overmix!
We'll use either a snowball pan or a muffin tin. Lightly grease your chosen pan with cooking spray or butter. This prevents the snowballs from sticking.
Pop your snowballs into a preheated oven at 160°C (320°F). Baking time will vary depending on your pan and oven. For a muffin pan, I find about 10 minutes per batch works perfectly. A good test is to gently touch the top – they should spring back slightly when done.
Let your snowballs cool completely before we move on to the fun part!
To prepare the coconut mixture, combine desiccated coconut and food coloring in a bowl. Gently mix the ingredients, then add water and continue mixing until the color is evenly distributed. Set aside.
In a separate pan, combine all the syrup ingredients and mix thoroughly. Place the pan over medium heat and bring the mixture to a boil. Allow it to boil until it reaches a sticky consistency. Remove the pan from the heat and let the syrup cool completely
Once they're cool, we'll dip them in our syrup Then, we'll roll them in colorful coconut. Now let's make the filling, in a bowl add the whipping cream and icing sugar and
beat until it forms a stiff peak and to a piping fitted a star nozzle
If using a muffin tin, cut your snowballs in half, add the whipped cream, and top with the other half. Get creative with your decorations!
