INGREDIENTS
Pastry
315ml cake flour
2,5ml salt
2,5ml ground cinnamon
65ml sugar
5ml baking powder
10ml grated lemon rind
125ml butter
1 egg
Filling
2 large Granny Smith apples
2 eggs
125ml sugar
30ml cake flour,sifted
10ml grated lemon rind
125ml fresh cream
1x250g carton cream cheese
15ml mixed peel (optional).
65ml raisins or sultanas, chopped
1ml salt
METHOD
Preheat oven to 180degrees. Grease a fairly deep 30x18cm cake
pan, sift dry ingredients, add lemon rind and cut in butter .
Add egg and mix well to form a smooth ball.Roll out
pastry on floured surface.Line base of pan with pastry.For the
filling,peel and core apples, cut into quarters, then into thin
slices.Arrange in overlapping lines in pastry shell. Beat eggs
and sugar until thick.Gradually add rest of ingredients for
filling and mix well.Pour mixture
over apples and bake for about 1 hour. Serve hot or cold, topped
with whipped cream and
sprinkled with cinnamon.
