Fried pineapple with honey cinnamon and lemon
2 tablespoon coconut oil /butter
2 tablespoon honey
½ tablespoon fresh lemon juice
Pinch of cinnamon powder
Coconut to sprinkle over
Vanilla ice cream
Preheat oven to 200c.
Remove skin and deep crowns of pineapple, cut lengthwise into wedges.
Heat pan with oil until hot and bubbles appear. Fry pineapple wedges 2 minutes each side.
Combine honey lemon and cinnamon mix together. Brush fried pineapple with honey mixture..
Sprinkle coconut over.
Place pineapple on a baking tray with parchment paper.
Lower oven to 180c and grill pineapple for 7-10 minutes.
Serve warm with scoops of ice cream
