1 & 1/2kg large grey prawns

METHOD
1. devein wash drain prawns very well2. In pot 1Tbs solid ghee (Clarified butter), pour in 1/4cup oil heat it up till ghee (Clarified butter) melts, sprinkle in 1 teaspoon whole cumin, chop in 2 onions large ones or 3 small ones, let them fry till dark golden brown, add in 1 teaspoon minced ginger 1Tbs minced garlic fry few seconds3. Empty in 1 & 1/2tin tomato that's been blended to purée (400g tin) with 1 & 1/2Tbs tomato purée, salt chilli powder to your taste, 1 teaspoon crushed coriander seeds, 1 level teaspoon turmeric, 1/2 teaspoon cumin powder, 1/2 teaspoon garam masala, 1 heap teaspoon tandoori powder, Itsp paprika powder, mix pour in 1/4cup water cover cook on medium high heat till thick & glossy Good 15 to 20min4. Add in prawns mix them into sauce, cover cook, don't over cook them as prawns will just go chewy not nice!... 5. as soon as you see prawns change colour they done leave another 3 to 4min switch off garnish with lotsa chopped coriander sprinkle of garam masala & good squeeze of lemon juice ...
