WHOLE CHICKEN SKIN ON
First time tried with Skin on
RECIPE
Wash and clean thoroughly the chicken esp the cavitySlightly steam in microwavePotatoes , Carrots, and (Sweet corn I boiled )You may use any Veges that you prefer also OnionFOR THE MARINADEMake a paste with3 tablespoon Melted butter or ghee (Clarified butter)(May use Oil)4 tablespoon Nandos Peri Peri Spice2Tblsp Tandoori spice2 tablespoon Mochacho spice1 teaspoon Magic MasalaSaffron optional1 tablespoon ginger garlic paste½ teaspoon Garlic½ teaspoon Dhana Jeeru (Cumin) mix1 teaspoon tumeric1 tablespoon tomato puree or pasteSauces(No Measurements)I used Tomato ,Mustard, and any Nandos sauceFew thyme and rosemaryMix wellMake slits on the ChickenRub over all the Chicken lift up skin A bit rub under the skinPoke small piece Cinnamon stick and 2 Clove on the chickenThenPlace the pot on stove for 10-15 minutes CoveredRemoveAdd all the half Steamed VegesTo the left over marinade mix well..add 2 Slit green chilliPlace it in the casserole or PotWith the ChickenPut foil on the wings and end of the drumsticks so it doesNot burnPour the left over marinadeOverPlace in pre-heated oven at 180* for +-70 minutes Depending on your ovenRemoveNow place in another servingCasseroleAdd more sauce if you prefer over to the marinade left in potAnd pour it overServe with Portuguese RollsAnd SaladsEnjoy 😍
