Boil -2 level Cups Rice (not basmati)Tint it with little tumericHandfull peas1 Cloves, ejachi, tuj (cinnamon stick)Big pinch Parsley or mixed herb2 tablespoon saltBoil until Wel done and fluffy and drainKeep aside
ThenIn a separate potAdd ghee (Clarified butter) or butter add stir fry 250 g hawain mixCook add Aromat (a South African Spice) to tasteKeep asideFor topping
NowMarinate the Fish
450g HakeMarinate with½ teaspoon crushed Dhana ½ teaspoon crushed Jeera(use the powder form if you prefer)5 tablespoon finely crushed or powdered Almonds (keep little aside to add to the tomato chutney)1 teaspoon salt1 teaspoon Crushed Garlic+-1 teaspoon Green chilli paste2 tablespoon Lemon juiceChopped Green dhania (coriander) Curry leaves2 tablespoon OilPlace a spring of curry leaves overKeep aside for +- 20 minutesThen place in ovenBake for 30 minutes ( DO NOT OVER BAKE)Remove
In a separate potAdd2 tablespoon oil Heat and add½ grated OnionVery little mustard seeds, whole Jeera and few garlic slices or crushedFew curry leaves chopped fineBraise nowAddThe almonds or almond powder that you kept aside1 teaspoon tumeric1 tablespoon Aminas wonder Seafood or Fish Masala or any brand1 large grated tomato and3 tablespoon tomato puree½ teaspoon sugarSalt to tasteCook wellAdd Kashmiri Chilli powder if you preferCook wellAdd little chopped dhania (coriander) and shallotAdd this over the FishCover with RiceThenSprinkle the stir fry overSprinkle Shallot or Chives and chopped Green dhania (coriander)Cover with foilSteam in oven +-20 minutesEnjoy
