INGREDIENTS
8 to 10 pieces of chicken legs and thigh- skin on
Zest and juice of one lemon3–4 cloves of garlic.Few sprigs of thyme, but only the leaves.4 tablespoons of olive oil 1 teaspoon each of: Garlic powderOnion powder,PaprikaMixed herbs.Cumin powderMustard
½ teaspoon white pepper
Sauce¼ Marinade 2 tablespoons of butter2 tablespoon Peri Peri sauce1 tablespoon lemon juice1 teaspoon garlic1 tablespoon mayo¼ cup fresh cream
METHOD
Blend spices and mix ¾ of it into chicken and marinate for a few hours. Bake on 190°C for 30 to 45 minutes until fully cooked.
For the sauce heat all ingredients on the stove mix through and pour over chicken once cooked. Top with fresh herbs and serve with roti and chips.
