INGREDIENTS
500g spaghetti6 XL eggs½ cup milk¼ cup fresh cream½ cup cream cheese 1 cup diced cooked chicken1 cup cheddar cheese (reserve some for tops)200g diced feta cheese¼ cup chopped flat leaf parsley/ or coriander1 tablespoon garlic paste1 teaspoon salt1 teaspoon freshly ground black pepper1 teaspoon ground green chillies
METHOD
1. Boil spaghetti till al-dente. Drain, and chop into small pieces.2. Preheat oven to 180°C.3. Grease cupcake pans.4. In a blender combine the eggs, milk, fresh cream and cream cheese.5. Blend till well combined, then add in cheeses, spices, garlic, chilli, cooked spaghetti and cooked chicken.6. Stir until combined, then fill each cup till ¾ full.7. Bake for 30min, or until firm and cooked through. (This will depend on the size of your cupcake pan).8. Whilst hot, if you'd like, top with a little grated cheese & pinch of dried herbs.9.
