INGREDIENTS
2 tablespoon oilPinch mustard seedsPinch cumin seedsFew curry leaves 4 large potatoes (peeled, cut into even thick discs)1 teaspoon coriander powder1 teaspoon cumin powder1 teaspoon fine salt1 teaspoon chilli powderΒΌ teaspoon turmeric powderPinch pepperWater as neededOptional- pinch ginger, garlic & green chilliesSliced white breadButterTomato sauce (ketchup)
METHOD
1. Rinse out potato discs and then toss in spices.2. In a pan, heat the oil and temper seeds and curry leaves, until seeds start to pop.3. Slowly add the potato to the pan.4. Allow to heat through, then add a little water to steam and cover the pan with a lid.5. Using a spatula lift and flip over potato slices gently, and allow to steam until tender.6. When cooked through, let potato crisp up and remove from heat.7. Butter sliced white bread and spread on a thick layer of aloo fry.8. Drizzle over some tomato sauce, close and enjoy. Note: You could also toast it and add some chutney instead of tomato sauce and some cheese if you'd like.
