INGREDIENTS
5 to 6 potatoes - cut into cubes
Oil
Curry leaves
1 tablespoon garlic
1 tablespoon green chilli
1 teaspoon dhana powder
1 teaspoon jeera powder
½ teaspoon haldi
Juice of lemon
Salt to taste
½ teaspoon black pepper
Handful finely cut dhania (coriander)
2 cups grated cheese
Roti :
5 cups flour
1 teaspoon salt
1 tablespoon oil
3 tablespoon ghee (Clarified butter)
Hot water as required to make soft dough
METHOD
Boil the potatoes until completely soft , mash and allow it to cool . In a large pot , Add the oil and curry leaves braise add the rest of the spices and braise on low for a bit until you smell all the wonderful flavors . Now add the mashed potatoes and mix well , leave this on low for about 5 minutes continue stirring to avoid burning . Take off the stove add the cheese while still hot and mix it in well . Now leave this too cool completely . Add the dhania (coriander)
In the meantime make the roti dough by adding everything and forming a soft dough .
Roll dough in smaller then puri size . Makes balls out of the potato mix Place ball in the middle close ,flatten and with a light hand start rolling .,
Fry in a tawa using ghee (Clarified butter) to so read on both sides
Serve with Aamli sauce
