INGREDIENTS
β’ 1Β½ cups chicken fillet, cubedβ’ 3 tablespoon olive-oilβ’ 2 med onions, gratedβ’ Β½ teaspoon green chilliesβ’ 1 teaspoon ginger garlicβ’ 1 teaspoon coriander & cumin powderβ’ 1 teaspoon crushed cuminβ’ Β½ teaspoon lemon pepperβ’ 1 teaspoon saltβ’ 1 large green tomato, liquidizeddβ’ 1 green pepper, juliennedβ’ 1 cup rice, 2 teaspoon saltβ’ 4 tablespoon basic green chutneyβ’ 1 cup boiled peasβ’ 1 tablespoon butter
Basic Green Chutney
β’ 1 cup coriander leavesβ’ 1 teaspoon garlic pasteβ’ 1 teaspoon coriander & cumin powderβ’ 1 teaspoon fresh ground chilliesβ’ ΒΌ teaspoon saltβ’ 1 tablespoon mayonnaiseβ’ 4 tablespoon lemon juice
1. Blend all the ingredients until smooth2. Leave in fridge and use when desired.
METHOD
1. SautΓ© onions, add ginger garlic and braise for a few minutes.2. Add spices, chicken, tomato and green pepper and braise for a few minutes3. Add ΒΌ cup water and cookon low heat until tender4. Cook rice with salt and drain5. Add rice and basic green chutney to the curry and mix well.6. Steam on low heat for 10 minutes.7. Heat butter, add the peas and season with salt and pepper.8. Garnish with peas before serving
