INGREDIENTS
Dough : 1&½ cups Flour ½ cup Semolina½ teaspoon Yeast½ teaspoon Bicarbonate of soda 1 tablespoon Castor sugar Pinch of Salt 1 cup Water½ cup Milk, warmed
Syrup : 2 cups Castor sugar 1 & ½ cups lukewarm Water2 teaspoon fresh Lemon juice
Cheese filling : 150 gr crumbled Sweet cheese⅓ teaspoon Cinnamon
Nut filling : ¾ cup Pecan /Badaam or a mix of both½ tablespoon Cinnamon ½ tablespoon brown Sugar½ tablespoon Coconut
For frying : 2 cups ghee (Clarified butter) or Olive oil
METHOD
Dough : Sift the dry ingredients into a bowl.Place half the amount into a food processor or blender, add the liquids, and mix for two minutesAdd the remaining dry ingredients and blend for another two minutes.Let it rise at room temperature for 20 minutes.
Syrup : in a saucepan, place the sugar and water and boil over medium heat for 7 minutes.Add the lemon juice and boil for 10 minutes until slightly thickened.Remove from heat and let it cool.The syrup must be cold to maintain a crunchy texture for the Kataifi.
Fillings : Mix the ingredients for each filling in a seperate bowl and set aside.If you want to prepare only one filling, double the quantities of the ingredients mentioned above.
Preheat a non-stick frying pan over medium heat.Make small flapjacks with the batter, once done, transfer it to a tray lined with a clean tea towel and immediately cover up with another towel to prevent it from drying out.
Place a spoonful of the filling onto the center of each Kataifi disc.Fold the circle into a semicircle and close by pressing the edges down.
In a skillet, heat the ghee (Clarified butter) or oil and fry the Kataifi on both sides.Transfer them directly to a bowl containing the cooled syrup.Using a slotted spoon, then transfer them to a cooling rack to remove extra syrup and coat in coconut.
Pour the extra syrup into a bowl and dip the kataifi in there before eating if desired.
