INGREDIENTS
4 medium eggs, separated125 ml castor sugar30 ml hot water60 g cocoa powder or grated chocolate125 ml self-raising flour, sifted30 ml castor sugar for sprinkling
My choice of filling: Nutella or Spar Chocolate Spread in the centre & sprinkling of icing sugar
Vanilla cream filling:200ml fresh cream10 ml icing sugar5ml vanilla essence
I used Spar chocolate Spread👍Only uses few ingredients!
METHOD
Preheat oven to 180 °C. Grease a 25 cm x 30 cm Swiss roll pan and line base with greaseproof paper. Beat egg yolks and 125 ml castor sugar for about 5 minutes or until thick and creamy. Blend hot water and chocolate or cocoa then add it to egg mixture. Mix in flour and blend well. Beat egg whites in separate bowl until soft peaks form and fold into chocolate mixture.Pour into pan and bake for about 12 minutes. Turn out immediately onto waxed paper which has been sprinkled with 30 ml castor sugar. Trim off crisp edges from sides of cake and roll up in greaseproof paper like a Swiss roll. Stand for about 2 minutes. unroll and set aside to cool. Beat together ingredients for filling. Spread cake with filling and roll up.Serve topped with whipped cream and chocolate fakes.
VARIATION* Spread 100 ml caramel condensed milk onto cake, top with sliced bananas and Vanilla cream filling. Roll up and decorate with caramel and whipped cream.* Spread Swiss roll with strawberry jam and mix 250 ml strawberries sliced* Recipe makes 10 slices.

I didn’t use the castor sugar I used the icing sprinkled it on lastly when I cut the Swiss roll
