INGREDIENTS
2 cups cake flour,sifted2 &½ teaspoon baking powder,sifted5 ml level teaspoon salt60 ml sugar or (125ml) Icing sugar,sifted125 g butter or margarine1 extra-large egg250 ml buttermilk or (250ml)1 Cup fresh cream ,I used this …beaten egg for brushing (optional)
‘Sifted everything twice,dry ingredients!
METHOD
Preheat oven to 200 °C. Sift flour, salt and castor sugar together. Rub in butter or margarine until mixture resembles breadcrumbs. Beat egg into buttermilk or cream..Add buttermilk or fresh cream to dry ingredients and mix to a very soft dough. Turn dough out onto floured surface and roll out to 2 cm thick.Cut out rounds with biscuit cutter. Place scones on greased baking sheets and brush with egg. Bake on middle shelf of oven for 15 minutes or until golden brown on top.MAKES ABOUT 12-14 VARIATIONS* Omit castor sugar and add 125 ml chopped dates.* Add 125 ml seedless raisins, sultanas or currants.Njoy with cheese,jam & cream & fresh strawberries or peaches
