My Simple style using Mutton
If using Chicken
Then use Level tsp measurements
As Chicken Kalya has less spice
RECIPE
In a Pot Fry1 Curry Spoon ghee (Clarified butter)3 tablespoon Oil1 &¼ Grated Onion Add whole spices the amounts your preferWhole Jeera,Anise, tuj (cinnamon stick), Elachi (cardomom) pods ,Cloves, Few whole black peppersBayleafWhole Green Or Red Chilli Braise Until Onion is lovely Gold in colourTHENIn a separate Dish MARINATE +- 1 kg Cut up Leg Mutton 1 teaspoon Ginger Garlic paste½ teaspoon Crushed Garlic1 Heaped teaspoon Magic Masala +- 1 teaspoon Crushed Red Chilli+-1 teaspoon Kashmiri Red Chilli Powder1 heaped teaspoon Dhana Powder1 heaped teaspoon Jeera Powder Or Just use 2 tablespoon Dhana Jeera powder½ teaspoon tumeric1 tablespoon Lemon juice +-4 tablespoon Tomato puree2 Medium Grated tomato1 cup Yoghurt or Maas well belatedSaffron stands OrSaffron essence Now mix all the braised spices onion to the above Cook on low heat ( add water if necessary to soften the meat ) Till ghee (Clarified butter)/Oil surfaces on top a bit ADJUST THE TASTE OF SALT AND CHILLILastly Add the fried Potatoes and shelled Whole Boiled EggsSee Below I steamed in microwave +-4 cut up Potatoes for +-15 minutes then I just fried it Boiled +-4 Eggs Garnish with Chopped Green dhania (coriander) Serve with Roti , Naan, or Basmati Rice Enjoy
