INGREDIENTS
200ml warm water1 packet yeast½ teaspoon honey2 cups (250 grams) bread flour½ tablespoon extra virgin olive oil1 teaspoon salt
Topping:5 cloves garlic, crushed60g salted butter1 tablespoon chopped fresh parsleyGrated/sliced mozzarella cheese
METHOD
1. Mix together warm water, yeast and honey. Using the dough hook on the stand mixer, add flour to the water/yeast mixture and combine until the mixture comes together. Leave to stand for 5 minutes.
2. Add oil and salt and continue to mix for 5 minutes until smooth and elastic. It will seem a little wet and sticky but that's perfect.
3. Cover the bowl with plastic wrap and allow the dough to rise for 1 hour.
4. Gently press out the dough with oiled hands. Just a bit, not too much. Imagine it as a square. Lift one side of the square and fold it over to the other side. Press it down. Then continue in this way, lifting and folding all four sides. This strengthens the dough.
5. Divide the dough into two portions. Shape each into a ball tucking the edges underneath to pull the surface tight.
6. Set the dough balls on a large baking sheet that has been sprinkled with semolina. Rub some oil on the top of each ball and loosely cover with plastic wrap.
7. Preheat the oven to 230°C and allow the dough to rise for 20 minutes.
8. In the meantime, prepare the garlic butter sauce. In a small saucepan, over low heat, melt the butter with the minced garlic. Allow the butter to gently cook the garlic for 1 or 2 minutes. Don't let the garlic color at all. Add the chopped parsley. Set it aside.
9. Take one ball at a time and press it out with oiled fingertips. Then stretch the dough into a circle about 20-23cm, keeping the edge thicker.
10. Place the pressed out pizza base on to a tray that has been brushed with olive oil and sprinkled with semolina. Repeat with remaining dough ball. OPTIONAL: Leave the pizza bases to stand for 15 minutes.
11. Brush the pizzas with garlic butter mixture.
12. Bake the pizzas for 8-10 minutes (a little longer if you want crispy pizzas) until the cheese is melted and bubbling and the edges are puffed and golden.
INFO & TIPS
This is half of the original recipe. Feel free to double it.
If your oven goes to 250ºC, bake it at that temperature. The higher, the better.
If you have a pizza stone, use that. It will give a better crust.
