INGREDIENTS
3 Eggs1 cup Castor sugar1 cup Oil2 cups finely grated CarrotsΒΎ cup chopped Pecans3 teaspoon Baking powder2 teaspoon Cinnamon powder Pinch of Salt Β½ teaspoon Bicarbonate of soda 1&Β½ cups Flour ΒΌ cup Water
METHOD
Beat the eggs and sugar well. Add the water and oil, beat till light and fluffy.Add the rest of the ingredients besides the Carrots and beat very well..Fold in the carrots, pour out into the cake pan.Bake on 180 degrees till done.Top with a cream cheese topping.Decorate as desired
