Sift together⅔ cup flour2 tablespoon cornflour 4 tablespoon cocoa powder 1 teaspoon coffee Pinch salt¼ teaspoon baking powder
Add flour mix to egg yolk mix in 3 portions.Fold in
Fold in ⅓ of meringue mixture .Then add the rest and fold in.
Pour into a lined Swiss roll baking pan.Bake 170 ° c for 15 - 18 minutes or until done.Turn out onto a clean towel and roll up into a Swiss roll. Leave to cool .
Hazelnut ganache 150g dark chocolate 100g milk chocolate 240g cream1 tablespoon butter¼ cup chopped hazelnuts
Open Swiss roll. Cut in the middle lengthwise.Spread fresh cream.Close and cut in pieces.
Place in cupcake liners.Top with Hazelnut ganache.Pipe a dollop of cream on the top.
