Rainbow cake for my daughter’s 5th birthday 🌈🎉
RECIPE
6 eggs seperated Beat egg whites until stiff
Beat yolks and 1 ¼ cup sugar until light and fluffy.Add¾ cup oil¾ cup water1 teaspoon vanilla essence Mix
Then add1 ½ cups flour3 tablespoon cornflour3 ¾ teaspoon baking powder MixFold in egg whites
Pour into two lined and greased round oven baking tins.Bake 160 ° thermofan oven.
Cut cakes into half.I used 3 halves only.
Make ermine buttercream....
Ermine buttercream
4 tablespoon flour1 cup sugarPinch salt1 cup milkBoil in a saucepan and mix continuously so no lumps form. Add 1 teaspoon vanilla essence Mix and pour into a bowl and cover with clingwrap Leave to cool then refrigerate.
In a mixer, Beat 250g butter (I used Stork white margarine)While mixing continuously add 1 tablespoon of the mixture at a time. Add until all is used up. Mix until light and creamy.
I stacked the cakes with a layer of buttercream, a drizzle of lotus biscoff spread and sprinkled on some lotus biscoff biscuits.
Cover the entire cake with buttercream.Colour a bit of the buttercream with different colours. I used gel colours. Pipe and decorate to form a rainbow.I added some fondant clouds and a 5️⃣ 🕯
