INGREDIENTS
1 Dozen Crayfish CleanedGarlic ButterCrushed black peppercornItalian mixed herbs
For the Sauce250ml Fresh cream1 tablespoon butter1 tablespoon flourCrush black peppercorns A pinch of saltA pinch of sugar
METHOD
Make a slit in middle of crayfish tails all spices and add garlic butter
Can add little bit of salt but garlic butter has salt
Place in a preheated oven at 200°c for 10 minutes or until the shell turns bright red and the meat is white, opaque and firm.
You can also grill them for 5 minutes on each side basting them with the garlic butter.
For the sauce
Add the butter to the pan and melt, add in the crushed black pepper corn, then add in the flour and make a roux, then add in the fresh cream, sugar and salt, mix till desidered consistency on low heat
Enjoy with warm rolls or garlic bread
