250g butter softened1 cup icing sugar¼ cup oil Few drops Peppermint essence (optional) 1 ½ cups desicated coconut3 tablespoon cocoa powderEnough flour to make form and soft dough approximately 2 and Half to 3 cups
METHOD
Pre heat oven to 170 deg Celsius. Cream butter and sugar until white and fluffy about 15 minutes add the oil and beat for another 2 to 3 minutes. Add the esscence ( optional) coconut and cocoa mix until combined. Slowly add flour 1 cup at a time to form a soft dough ( dough should not stick to your hands)Divide the dough and form into logs ( you can use wax paper for this) leave in the fridge for 15-20 minutes, then slice place on to a baking tray and bake for 10 minutes in preheated ovenCool completly, dip the top in melted chocolate top with Aero Peppermint
