INGREDIENTS
4 eggs 125g butter1 cup Castor sugar 1 and ΒΌ cups flour1 and Β½ teaspoon baking powderΒ½ cup milk4 tablespoon blue Poppyseeds2 tablespoon freshly squeezed orange juice
METHOD
Separate the egg whites from the yolk. Beat the egg whites until stiff and set aside. Soften the butter, add sugar and the egg yolks and beat until pale in colour and creamy. Mix in the flour, baking powder, poppyseeds and juice. Beat a little. Add in the egg whites and gently mix until combined. Pour into a greased cake pan and bake on 180 degrees until done. Once baked, leave to cool completely and then pour the syrup over.
Syrup:1 cup sugarΒ½ cup freshly squeezed orange juice.
Simmer together until sticky. Remove from stove. Cut small slits in the top of the cake before pouring the syrup over. Leave to absorb a little before serving.
