RECIPE
Golden yellow, soft, and spongy β Khaman Dhokla is a true masterpiece of Gujarati cuisine.Made with chana flour, gently steamed, then drenched in a sweet, tangy, and spicy tempering β every bite is a burst of flavours. πΏItβs light enough to enjoy any time of day, yet so addictive youβll be reaching for seconds (and thirds).

To a bowl add:175 ml water1 teaspoon salt1 teaspoon citric acidΒ½ teaspoon turmeric4 teaspoon sugar
Mix with a whisk to dissolve the sugar.
Add200 g Chana flourMix well. Cover and set aside for 15 minutes.
Add2 tablespoon.oil Mix
Then add1 teaspoon bicarbonate of soda2 tablespoon water π§
Mix well. Pour into a greased dish or baking pan.. Steam in a closed pot for 25 minutes.
Let cool for 5 minutes. Pour over Β½ cup water with a tablespoon. π₯
In a pan heat 4 tablespoon oil, 1 teaspoon mustard seeds, curry leaves πΏand 4 green chillies. Fry for a minutes then add Β½ cup water and 1 heap tablespoon sugar. Bring to boil. Pour over khaman and cut into squares.... garnish with dhania (coriander)π and coconut π₯₯
