1 kg bhindi (lady fingers) wash wipe with paper towel and slice sprinkle fine salt and mazeina In a pot add oil Fry bhindi (lady fingers) till slightly crisp Remove with slotted spoon set aside Same pot add more oil add a sprinkle of whole jeera whole red amd green chillies and 2 onions finely sliced lengthwise once onions are soft add 2 teaspoon garlic 2 teaspoon red garlic masala and about 5 roughly chopped tomatoes must be chopped not liquidised then add 2 teaspoon salt 1 teaspoon huldi 2 teaspoon crushed red chillies 4 teaspoon chilli powder 1 teaspoon dhana jeeru (cumin) Squirt of lemon juice Braise till tomatoes soften and oil surfaces tgen add 1 tablespoons yoghurt and the fried bhinda and braise on low for 10 minutes add chopped dhania (coriander) and more slit green chillies and serve with rotis
