Nando’s - Inspired Boujee Bowls

INGREDIENTS

Chicken:Marinate 500g chicken strips with:2 tosp olive oil1 teaspoon crushed garlic1 teaspoon red chilli powder1 teaspoon lemon juice½ teaspoon turmeric1 teaspoon coriander powder½ teaspoon cumin powder1 teaspoon black pepper½ teaspoon lemon pepper1 teaspoon Nandos Sauce of your choice I used mild)A pinch of Aromat (a South African Spice)Salt

Spicy Rice: 1 and ½ cups basmati rice, salt and a pinch of turmeric. ½ cup cubed carrots, ½ cup coloured cubed pepperschilli powder, spice for rice

METHOD

Spicy rice: Boil rice with salt and a pinch of turmeric.In a pan, heat some olive oil, add cubed carrots, coloured cubed peppers, give it a mix and fry for 3-5 minutes., season with red chilli powder, spice for rice and a pinch of salt, mix with the cooked rice.Add ¼ cup water and let it steam on low heat.
Chicken
In a pan, heat 1 tablespoon olive oil, add the chicken,let it cook, leave it saucy,add 2 tablespoon any nandos sauce(I used Nandos Prego Sauce)

Robot Peppers Stirry:In a pan, heat 1 tops olive oil, add robot peppers cut into strips, add 1 handful sweetcorn and season with pepper,red chilli flakes, Aromat (a South African Spice) and a pinch of salt.
To assemble, place the rice at the bottom of the bowl, then add the chicken to one side of the bowl, the stirfry on the other side and some baby spinach leaves on the middle
