Rooibos-Infused Milk Tart Cookies

125 g butter
Β½ cup icing sugar
β
cup cornflour
Β½ cup oil
Β½ teaspoon vanilla essence
Β½ rooibos tea bag leaves (optional)
2 cups flour
Method:
1. Beat butter and icing sugar until light and creamy.
2. Add cornflour and mix well.
3. Pour in oil, vanilla essence, and rooibos tea leaves. Mix until combined.
4. Add flour and form a soft dough.
5. Roll out dough, cut into large rounds, and bake at 180Β°C until lightly golden.
6. Cool completely before topping.
Milk Tart Topping
1 egg
ΒΌ cup sugar
1 tablespoon cornflour
1 cup milk
1 cinnamon stick
1 rooibos tea bag
Method:
1. Whisk together egg, sugar, and cornflour in a bowl.
2. Heat milk with cinnamon stick until just before boiling.
3. Slowly pour hot milk into egg mixture while whisking continuously.
4. Return mixture to the pot and cook on low heat until thickened.
5. Remove from heat, add rooibos tea bag, steep for 1 minute, then remove.
6. Pour custard into a bowl, cover surface with cling wrap, and refrigerate until cold.
7. Transfer to a piping bag, pipe onto cooled cookies, and sprinkle with cinnamon
