INGREDIENTS
2 whole chickens, skin removed and cut into 8 pieces
Marinade:1.5 cups Greek yogurt1 tablespoon garlic paste1 tablespoon ginger paste1-2 teaspoon green chutney1.5 teaspoon chili powder2 teaspoon salt1 tablespoon tandoori powder1.5 teaspoon turmeric2 tablespoon olive oilHandful of finely chopped cilantro
Gravy Sauce:Chicken juices from the pan1 cup strained tomatoes1 teaspoon green chutney2 tablespoon fried onions1-2 teaspoon chili powder1 teaspoon garam masala2 teaspoon salt1 tosp tomato paste⅓ to ½ cup water
METHOD
1. Marinate the chicken in a large bowl for at least 30 minutes, or overnight in the fridge.2. Preheat oven to 370°F. Place the chicken on a large baking tray and bake for 45-55 minutes, until the juices run clear.3. Pour the juices from the tray into a medium saucepan and place over medium heat.4. Let the sauce simmer and thicken slightly. Pour it over the baked chicken and return to the oven on broil for 3-5 minutes. Watch closely until the top browns lightly.5. Top with freshly chopped cilantro and serve with rice, roasted potatoes, or naan.
