Shahi Mutton Korma

Ingredients
Dry spice mix (to roast & grind):
1 tablespoon cumin seeds
¼ cup coriander seeds
1 tablespoon peppercorns
¼ cup chana dhal
1 piece cinnamon
4 green cardamom pods
1 black cardamom pod
1 star anise
4 dried red chillies
For the curry:
2 onions, sliced and fried until golden brown
Oil, for cooking
3 bay leaves
1 black cardamom
3 cloves
1 ½ tablespoon ginger-garlic paste
1 ½ kg mutton
Ground spice mix (from above)
Salt, to taste
2 teaspoon red chilli powder
Water, as needed
1 cup yoghurt
¼ cup blanched almonds, blended to a paste
Optional additions (my twist):
1 tablespoon Shan curry powder
1 tablespoon karhay masala
½ teaspoon garam masala
For garnish:
Green chillies
Fresh coriander leaves
Fresh ginger, julienned

Method
1. Prepare spice mix – Dry roast all the listed spices until aromatic. Cool slightly and grind into a fine powder.
2. Fry onions – Slice and fry the onions until golden brown. Set aside.
3. Cook mutton – In a heavy pot, heat oil. Add bay leaves, black cardamom, and cloves. Then add the ginger-garlic paste. Sauté for a minute.
4. Add the mutton pieces and stir well. Sprinkle in the ground spice mix, salt, and red chilli powder. Sauté to coat the meat.
5. Add water, cover, and cook until the meat is tender.
6. Once cooked, stir in yoghurt and almond paste. Mix well and simmer for a few minutes until rich and creamy.
7. (Optional) Add curry powder, karhay masala, and garam masala for extra depth.
8. Garnish with fried onions, green chillies, coriander, and ginger juliennes.
Serve hot with naan, roti, or rice.
