INGREDIENTS
• 1 large butternut, peeled & cubed• 4 sweet potatoes, cubed with skin• 1 large red onion, finely chopped• 2 tablespoon olive oil• salt & pepper to taste• ½ teaspoon crushed garlic
Dressing:
• 1 cup mayonnaise• ½ cup sweet chilli sauce• 2 tablespoon tamarind juice• salt & pepper to taste• 1 cup almonds, chopped• 2 tablespoon sesame seeds crushed chillies salt• 3 tablespoon olive oil
1 cup coriander leaves, chopped
METHOD
1. Preheat oven to 200 degrees.
2. Toss butternut with olive oil, salt, pepper & garlic and place on a tray. Bake until tender.
3. Toss sweet potato with olive oil, salt, pepper and garlic and place on a tray. Bake until tender.
4. Combine butternut, sweet potato and onion.
5. Fry the almonds and sesame seeds in the olive oil.
6. Strain the almonds
7. Sprinkle crushed chillies and salt over almonds and leave to cool.
8. Add half the chopped coriander leaves to the salad.
9. Mix the dressing ingredients together and pour over salad and toss.
10.Set the salad on a platter and sprinkle the almonds, sesame seeds and remaining coriander leaves over.
11. You can cube and roast one large brinjal and also add this to the salad.
