250 g brownedbutter
150 g brown sugar
1 large egg
⅓ cup golden syrup
250 ml milk
2 cups oats
2 cups toasted coconut
3 cups flour
1 teaspoon ground cinnamon
2 teaspoons baking powder
1 ¼ teaspoons salt
1. Preheat your oven to 170°C.
2. Brown the butter by heating it in a small saucepan. Stir until milk solids turn light brown, then remove from heat and let it cool slightly.
3. In a large bowl, whisk together the browned butter, brown sugar, egg, and golden syrup until well combined. Then add the milk and mix.
4. Toast the coconut until golden
5. Add to the wet mixture: oats, the toasted coconut, flour, baking powder, cinnamon, and salt. Mix until fully combined.
6. Press the batter into the prepared baking tray and smooth the surface.
7. Bake for 50–60 minutes.
8. Remove from oven and let cool slightly, then slice again cleanly with a serrated knife to separate the rusks.
9. Drying (second bake): Preheat oven to 90°C. Place the rusks (separated) on baking trays and dry for about 4 hours or overnight until they're fully dried.
10. Let them cool completely. Store in an airtight container.
