INGREDIENTS
300g Lamb chops1 TB oil2 teaspoon ghee (Clarified butter)Green chillies to tasteFresh garlic cloves to taste (1-2)Fresh ginger (a small piece)A few strands of saffron2 TB ginger and garlic paste1 TB brown vinegar1 medium onion (roughly chopped)Freshly ground black pepper (to taste) or black pepper powderFine salt to tasteAromat (a South African Spice) to taste
METHOD
Using a pestle and a mortar,pound the green chillies,ginger and garlic to a rough paste.Smear this paste on the chops and add the rest of the ingredients.Mix well.
To a pressure pot add the oil and ghee (Clarified butter),allow to heat for a minute before adding the chops. Add a few 'splashes-of-water' and cook on medium heat until the chops are tender.
Keep replenishing water as and when necessary...(only a little bit at a time)
For a stove pot method,repeat the steps outlined above.
INFO & TIPS
Use green chilli paste instead of fresh green chillies if desired
De-seed chillies for less heat.
