INGREDIENTS
4-5 med potatoes
salt to taste
+/- ¼ teaspoon turmeric powder
+/- 1 teaspoon crushed garlic
+/- 1 and ½ teaspoon crushed green chillies
juice of half a lemon
handful of chopped coriander/cilantro
Tempering:
2 tablespoon oil
½ to 1 teaspoon mustard seeds
Batter to coat:
1 cup chana flour
½ teaspoon salt
¾ teaspoon baking powder (level)
water to make a thickish batter.
METHOD
Peel,cube and boil potatoes till just done, DO NOT
overboil.
Smash slightly but DO NOT mash as for mashed
potato.
Add in spices and greens to the potato.
Heat oil with mustard seeds till they begin to pop and
add to potato mixture. Mix well.
Form into small balls with oiled hands and refrigerate
for an hour or 2 for best results.
Mix batter ingredients, batter should coat the back of a
spoon.
Coat potato rounds straight from the fridge in batter
and fry in hot oil till lightly golden,drain and serve with
chutney of choice!
