Ingredients
3 x 250g smooth cottage cheese - 250ml fresh cream -
3 eggs - ¾ cup sugar - 50ml cake flour - 1 teaspoon vanilla
essence.
Base
1 packet Eetsum mor or Tennis biscuits - 3 tablespoons butter /
margarine - Alternatively use short crust pastry to line
baking tin.
METHOD
Method
Crush the biscuits and mix well with the melted butter.
Press in a 23cm spring form baking tin (loose bottom
tin). Mix all the ingredients and scoop the mixture into
the biscuit lined baking tin. Bake at 180c for 35/40
minutes till set. Cool cake. Decorate with softened
caramel and sprinkle chocolate over or use topping of
your choice. The cheese cake should have a slight
wobble in the middle and the remaining heat in the
cheesecake will set it.
INFO & TIPS
If your cheesecake cracks on setting it has probably
been overcooked.
